Ingredients

  • 400g fresh fettuccine pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 500g mixed wild mushrooms (shiitake, oyster, cremini)
  • 1 shallot, finely chopped
  • 1/2 cup dry white wine
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp black truffle oil
  • Fresh thyme leaves
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to boil for the pasta.
  2. While water heats, clean and slice the wild mushrooms.
  3. Heat olive oil in a large skillet over medium heat. Add garlic and shallot, sauté until fragrant.
  4. Add mushrooms to the skillet and cook until they release their liquid and begin to brown.
  5. Pour in white wine to deglaze the pan, scraping up any browned bits.
  6. Cook pasta according to package directions until al dente.
  7. Reduce heat to low and stir in heavy cream, Parmesan, and truffle oil.
  8. Season with salt, pepper, and fresh thyme.
  9. Drain pasta, reserving 1/2 cup of pasta water.
  10. Add cooked pasta to the sauce, tossing to coat. Add pasta water as needed to reach desired consistency.
  11. Garnish with fresh parsley and additional Parmesan before serving.
